Sprouted Potatoes: To Eat or Not to Eat?

 Potatoes sprout in light or warmth. Don't store near onions!

Fridge storage bad! Turns starch to sugar, makes toxins.

Small sprouts? Cut them off and eat the potato 

Many large sprouts or wrinkled skin? Toss it 

Potatoes contain solanine and chaconine, toxins 

Toxins increase with age and light exposure 

Peel potatoes and remove sprouts to reduce toxins 

Store potatoes in cool, dark place like a pantry 

Green potatoes? Not dangerous, but toss them anyway 

Musty odor? Spoiled potato! Throw it out
